  • 2 limes, thin peelings of skin only
  • 2 lemons, thin peelings of skin only
  • 2 tsp ground turmeric
  • 1 pinch saffron
  • 2 garlic cloves
  • 2 Kashmiri dried chillies
  • 1 heaped tsp sweet paprika
  • 1 heaped tsp caster sugar
  • 2 tsp fine sea salt, plus extra to taste
  • 1 tsp ground black pepper, plus extra to taste
    ou 1 tsp black peppercorns

  • 60 g unsalted butter, diced
  • 900 g chicken stock
  • 850 g waxy potatoes, peeled and quartered
