  • 1 tbsp nigella seeds
  • 1 tbsp fennel seeds, dried
  • 1 tbsp black peppercorns
  • 2 tbsp poppy seeds
  • 1 cinnamon stick
  • 2 star anise
  • 5 whole cloves
  • 1 cardamom pod, black
  • 4 cardamom pods, green
  • 1 tbsp nutmeg, ground
  • 2 tsp turmeric, dried, ground

Chicken

  • 500 g chicken breasts, skinless, boneless, diced (2.5 cm)
  • 2 tsp salt, divided, to taste
  • 3 - 4 cm fresh ginger, peeled, cut into pieces
  • 10 garlic cloves
  • 225 g onions, quartered
  • 15 g coconut oil
  • 225 g tomatoes, quartered
  • 1 bunch fresh cilantro leaves (approx. 45 g), plus extra to garnish
  • 3 fresh green chillies, deseeded
  • 45 g coconut, shredded, unsweetened
  • 30 g water
  • 395 g coconut milk
  • 225 g fresh pineapple, cut into pieces (2.5 cm)
  • rice, steamed, to serve
